Egusi, unhurried — the case against a rushed pot.

We tested seven versions of egusi soup across a month. The winner was, as ever, the patient one.

In January we ran what we called the Egusi Trials. Seven batches over four weeks, each one documenting a different variable — oil quantity, egusi grinding method, order of operations, protein choice, fire intensity. We kept a log. We argued. We ate a lot of soup.

The results were humbling. We were expecting some clever technique to emerge — a temperature trick, a sequence nobody had thought of. What we found instead was that the batches we rushed, for any reason, were the batches we threw away. The ones we forgot about, left to simmer while we worked on something else, were the ones we photographed.

The egusi doesn't care about your schedule. It tells you when it's ready. The skill is in learning to listen.

What patience actually means in a pot

When we say slow, we mean specific things. We mean toasting the ground egusi in dry oil, low heat, until it turns golden and the kitchen fills with a nutty smell that has no direct translation but sits somewhere between roasted groundnut and warm bread. This takes twenty minutes. It cannot be hurried.

We mean adding the stock in stages rather than all at once, so the egusi has time to absorb each addition before the next. We mean leaving the locust beans whole and letting them release their complexity slowly, rather than grinding them in for an aggressive shortcut.

The protein matters less than anyone thinks. What matters is that it has been treated with some form of respect before it enters the pot — salted, browned, simmered in its own stock. Goat is our preference, but we have made extraordinary egusi with dried fish and nothing else.

Our standard pot takes two and a half hours from the first application of heat to the bowl. For private catering, we start the day before. The soup that has spent a night holding is a different thing altogether — rounder, deeper, the kind of flavour that makes people go quiet.
